A fruity take on the original, this time using pineapple to create a lovely sweet flavour.
6 Mint leaves, plus an extra spring to decorate
4 Pineapple chunks, plus a wedge to decorate
2 teaspoons soft light brown sugar
2 Measures golden rum, such as Havana Club
Pineapple Juice, to top upPut the mint leaves, pineapple chunks and sugar into a cocktail shaker and muddle together. Half fill the shaker with ice cubes and fill a highball glass with crushed ice. Add the rum to the shaker and shake until a frost forms on the outside of the shaker. Strain over the ice in the glass. Top up with pineapple juice and stir. Decorate with a pineapple wedge a mint spring and serve.
